The fructose in honey improves the browning quality. Honey can be substituted for sugar and because it is a liquid, it is necessary to reduce the amount of liquid in the recipe by one-quarter cup for each cup of honey. Honey can be used as a sweetener in canned or frozen fruits, jams and jellies and drinks. Honey is one of the earliest forms of sweeteners and perhaps precedes the use of cane and beet sugar. Beekeeping for the purpose of obtaining honey is an ancient art. It possibly goes back to the early Egyptians who used honey in medicine. Honeybees produce more honey than they can use. We sell only their surplus. All of our products have been certified through stringent testing for health, quality and uniformity through the University of Maine. Our gift boxes come with a variety of hand wood burned designs including: a moose, a chickadee, a raspberry cluster, a honeybee on a flower, a loon, a trout, a bear, the State of Maine outline, a lobster or if you prefer, give us a picture (preferably black and white) no taller than three inches and no longer than our gift box and we may possibly be able to make your own personalized design.
